Busy Vacation Days

I’m not naming names, but someone may have texted me and asked if I was okay because I hadn’t posted in a while. 😉 Actually, hadn’t posted since I got sick.

Well, I am mostly feeling better but my ear does still twinge every so often.

The reason I haven’t written much is a good friend is in town and she is just keeping me too busy. My boss let me have two days off work (which is amazing since they are the first two days of the semester) so I have been showing her the sites. We got up late this morning and after I had breakfast we took a run/walk down to the beach. I live on the intracoastal, so it is about a mile to the Atlantic. We put our toes in the water and then came back.

We went and got pedicures this afternoon and I made her one of my favorite meals for dinner. Totally not a diabetic recipe but oh so good. You put some chicken breasts in the crockpot and add an 8 oz bottle of Russian salad dressing, a small jar of apricot preserves, and a packet of onion soup mix powder. Let it cook on low all day and enjoy!

Talk to you all soon – I will deliver her to Orlando tomorrow night for the conference she is in town for and it will be back to the daily grind.

    Bernard – don’t you worry. I snapped quite a few pictures. My friend has a Nixon D40 so I was experiencing a bit of camera envy as well! 😐
